That does seem like a good idea for the cheesecake.<br /><br />In case you haven&#39;t heard this disturbing news, some companies have secretly mixed corn syrup in with agave nectar. I haven&#39;t been able to find out which ones so I have been laying low on the agave and have been using an even more low glycemic sweetener called palm sugar. I think you&#39;ll really like it. I too am very sugar sensitive and have been strictly avoiding the stuff for a couple of months now, but my goal is one year (to convince myself that I can do it for good!). <br /><br />I wanted to mention that I made my own chocolate cookies to crumble for this recipe. I used this recipe http://allrecipes.com/Recipe/Chocolate-Chocolate-Chip-Cookies-I/Detail.aspx but omitted the chocolate chips, substituted 1/2 cup agave nectar for the sugar, and added an extra 1/2-1/4 cup of flour (cannot recall exactly). The cookies did not turn out great enough for me to want to eat them plain, but they taste good enough to be used as crumbs to be added to something else, and they crumbled perfectly (I put them in the oven for a few extra minutes after crumbled to dry out a bit). I will be making the cheesecake tomorrow. <br /><br />Thanks for your great blog.
